&lt;p&gt;&lt;span&gt;“Champagne and crémant are both made using the &lt;/span&gt;&lt;em&gt;méthode traditionnelle &lt;/em&gt;&lt;span&gt;(known as the &lt;/span&gt;&lt;em&gt;méthode champenoise&lt;/em&gt;&lt;span&gt; until the Champenois called in their lawyers). The process involves two fermentations: first in regular vats or barrels, and then a second in bottle under cork. The CO2 produced in the second fermentation can’t escape the bottle, and is dissolved into the wine.”&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;Morning tasting in Rudesheim, as snow starts to pick up. Over hour-long tasting of crisp, lovely Rheingau Rieslings, two more inches accumulate. With 30ish foot visibility and no plows in sight, we pull off the road and get stuck on an off ramp. We fishtail and push our way back onto the road, cancel our afternoon tastings, get stuck again on a four-lane, and finally head for the Alsace. Six hours and two Toblerones later we roll into Westhalten to friendly faces. An early evening tasting - fantastic wines, even better than usual - and a quick pause. Then dinner in Rouffach - &lt;em&gt;foie gras&lt;/em&gt;, &lt;em&gt;St. Pierre&lt;/em&gt; (John Dory), and &lt;em&gt;mirabelle eau-de-vie&lt;/em&gt; highlight an exceptional dinner. &lt;p&gt;Sunday morning we leave Beaune; drive past Nancy, through Luxembourg, and into Germany. We trace the Mosel river past impossibly steep slate slopes through drizzling rain as the temperature drops. Arrive in Bernkastel-Kues, taste through samples from Nahe and Rheingau. Schnitzel and beer for dinner.&lt;/p&gt;
&lt;p&gt;Monday morning is cold and damp. Substantial German breakfast in our hotel, then two morning tastings along the Mosel. Wines here are only Riesling: bursting with acidity, orange, honeysuckle, smoke, apple, petrol, salinity. A fascinating range of sweetness, acidity, and interplay between the two.&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Quick lunch and another Mosel tasting with a promising young winemaker, and it begins to snow. Drive overland from the Mosel Valley to the Rhein Valley, through snowy forest and countryside. Ferry across the Rhein to Lorch, for the day’s final tasting of stony, bright, very fresh Riesling.
